We love to share with you our special Halloween recipe, to savor together the autumn atmospheres and enjoy, even at the table, the colors of nature in Maremma Tuscany at Fattoria La Maliosa. Our Evo oil, pumpkin and ricotta cheese from the local dairy factory ‘Caseificio di Manciano’, just a few simple ingredients for a result with a taste of home. A real comfort food!
Ingredients for a quiche for about 8 person:
- 400 gr of Pumpkin
- 200 gr of Ricotta cheese from Caseificio di Manciano
- 100 gr of Parmigiano Reggiano
- 1 roll of shortcrust pastry
- La Maliosa Aurinia organic EVO oil q.s.
- 1 clove of garlic
- 150 gr of fresh Mozzarella cheese
- 1 organic egg
- 1 sprig of rosemary
Process
Clean the pumpkin, cut it into cubes and cook it in a covered pan with a glass of water with La Maliosa Aurinia EVO oil, garlic and rosemary for about 20 minutes. Blend the pumpkin. In a bowl, mix the egg with the Parmigiano cheese, add the ricotta and the blended pumpkin and mix everything together until a homogeneous mixture is obtained.
Roll out the shortcrust pastry on a round baking sheet with its parchment paper. Arrange the diced fresh mozzarella on the bottom of the shortcrust pastry. Then pour the previously made pumpkin mixture. Close the edges of the pastry; brush the edges with a little milk.
Bake the cake for about 40 minutes in a preheated and ventilated oven at 170 °. Let it rest and cool for about 30 minutes before serving.
