The sort of cold days when the rush of fingers at the keyboard is interrupted for a sip of something hot and a look out the window directly at the whitewashed tiles on the roof. The snow falls slowly and silently without disturbing the usual city noises.<\/p>\n<p>Inside there\u2019s still the scent of mulled wine, a pleasant &#8220;indoor aroma&#8221; that makes the beautiful piece of meat purchased from a favourite butcher even more tender.<\/p>\n<p>Yesterday I opted for rump steak, a versatile and tasty first-grade cut and I decided to accompany it with a creamy seasonal root vegetable&#8230;<\/p>\n<p style=\"text-align: center;\"><a href=\"https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\" size-medium wp-image-4520 aligncenter\" src=\"https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21-640x471.jpg\" alt=\"21\" width=\"750\" height=\"552\" srcset=\"https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21-640x471.jpg 640w, https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21-768x565.jpg 768w, https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21-1170x861.jpg 1170w, https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21-600x441.jpg 600w, https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21-160x118.jpg 160w, https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21-320x235.jpg 320w, https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21-960x706.jpg 960w, https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/02\/21-1920x1412.jpg 1920w\" sizes=\"(max-width: 750px) 100vw, 750px\" \/><\/a><!--more--><\/p>\n<p style=\"text-align: center;\"><em><strong>Marinated rump steak with Jerusalem artichoke puree<\/strong><br \/>\n<\/em>Ingredients for 4 people<br \/>\n700g of rump steak<br \/>\n300g of <strong><a href=\"https:\/\/fattorialamaliosa.it\/wp-content\/uploads\/2015\/10\/4a_scheda_rosso_2014-ENG.pdf\">La Maliosa red wine<\/a><\/strong><br \/>\n3 tablespoons of red wine vinegar<br \/>\n2 small shallots<br \/>\n1 sprig rosemary<br \/>\n250g of Jerusalem artichoke<br \/>\n2 tablespoons of black olives, pitted<br \/>\n1\/2 cup of dry white wine<br \/>\n<a href=\"https:\/\/fattorialamaliosa.it\/en\/prodotti\/olive-groves-and-extra-virgin-olive-oil\/\"><strong>La Maliosa extra virgin olive oil<\/strong><\/a><br \/>\n1 clove of garlic<br \/>\nparsley<br \/>\n1 knob of butter<br \/>\nflakes of fleur de sel<\/p>\n<p style=\"text-align: center;\">Method<br \/>\nIn a saucepan, pour in the red wine, vinegar, rosemary and peeled shallots. Bring to the boil and pour the wine over the meat after removing the fat and placing in a baking dish. Cover and marinate until the wine has cooled completely.<br \/>\nPeel the Jerusalem artichokes and cut into very thin slices. Cook over low heat in a pan with 40g of oil and a clove of peeled garlic. After a few minutes, pour over the white wine and cook for 3 minutes.<br \/>\nBlend the Jerusalem artichokes with the chopped parsley and olives.<br \/>\nDrain the rump steak and dry well with paper towels. Cut into 2\/3cm slices. In the same pan you cooked the Jerusalem artichokes in, melt the butter and add the rump slices. Cook for 2 minutes per side over medium heat. Turn off, cover and let rest for 10 minutes. On a cutting board, cut the meat into serving slices and serve with flakes of fleur de sel and a quenelle of Jerusalem artichoke puree.
