In the spring, we experienced excessive rain and humidity, which compromised part of the production due to pollination difficulties during flowering.<\/p>\n\n\n\n<p>However, the staggered flowering and fruit set, thanks to the variety of cultivars on our farm, helped us partially overcome these challenges.<\/p>\n\n\n\n<p>In our area, there were several damaging hailstorms during the summer, but fortunately they spared our olive groves. The olive fruit fly was virtually absent here, and as usual, we opted in part for mechanical protection, using micronized mineral clay together with small amounts of copper to make the olive fruit less appealing to the damaging insect.<\/p>\n\n\n\n<p>Although the harvest was partially compromised in terms of quantity, the quality of the olives was excellent, allowing us to produce high-quality premium evo oils.<\/p>\n\n\n\n<p><strong><em>Which cultivars best expressed our territory this year?<\/em><\/strong><\/p>\n\n\n\n<p>Among our varieties, the one that adapted best to the 2025 olive-growing season was Leccino, a variety widespread in the territory of ancient Etruria. The best batches were selected for our single-varietal CRU Caletra.<\/p>\n\n\n\n<p>Thanks to careful harvesting practices\u2014keeping the olives cool and bringing them to the mill within a few hours\u2014we obtained a fruity, herbaceous oil with artichoke notes and a medium intensity of bitterness and spiciness, both pleasant and balanced. On the palate, alongside the artichoke, there are fresher vegetable notes like wild chicory. This mix of aromas and sensations makes our oils very pleasant and well-balanced.<\/p>\n\n\n\n<p>The Aurinia blend is very smooth on the palate; in terms of aroma, you can detect fresh vegetables, including lettuce and fresh fava beans.
